Story of the bean:
All coffee throughout the world descends from plants which originally grew wild in the highlands of Ethiopia. Within name, Yirg is for Yirgacheffe, Z for zero defect. The Yirgachefe region is world-renowned for its distinctively floral and fruity coffees. "Zero defect" means the coffee seeds were triple sorted by hand and the workers paid an additional incentive to ensure only the very best beans make it to La Colombe.
